Panino con melone e pancetta, or sandwich with melon and bacon is a very fresh and popular sandwich in several parts of Italy.
So let’s start: here are the ingredients for three people…you need:
1 tablespoon of white vinegar
1 melon
4 tablespoons olive oil
300 g bacon or bacon
6 pieces of bread
pepper to taste
1 bunch arugula
salt to taste
Cut many very thin slices of melon (melone). Spread 4 slices of melon on the pieces of bread. Add 100g of bacon (pancetta) on top of the melon and top it with 1 bunch of chopped arugula (rucola). Pour 4 tablespoons of oil in a jar, add 1 tablespoon of white vinegar or apple cider, salt and pepper. Close the lid and shake the jar. Drizzle the arugula, melon, and pancetta with the sauce, put the two sides together and serve. Buon appetito!
