Celebrate Hallowe’en with an Irish recipe



Barmbrack, which derives from the Irish báirín breac (‘speckled loaf’), is a traditional Irish sweet cake associated with the festival Samhain or Hallowe’en (31 October). It is made of dried fruits like sultanas and raisins, and is delicious eaten either spread with butter or plain, whether as a dessert or simply a special teacake. Many barmbrack neophytes are surprised to discover that a ring is often baked into the cake. This derives from an old divination ritual which held the lucky individual that found the ring would soon be married.

Ingredients

  • 454g plain flour
  • 100g sugar
  • 454g mixed dried fruit
  • 1 egg
  • 1 teaspoon mixed spice or all spice
  • Pot of cold tea
  • 2 teaspoons of baking powder
  • Ring (optional)

Pre-heat the oven to 180 degrees C (390 degrees F).

The key to making a deliciously moist barmbrack is to soak the fruit in cold tea overnight. When adding the ingredients together, it is important not to knead or over-mix as the softened fruit may break up. Grease two loaf baking dishes and place in the oven for 80 minutes.
